Sparkling wine, that is a Champagne
styled wine not produced in France's Champagne region, is often
served before or after the meal (with dessert).
Though it does pair beautifully with pre-dinner treats, sparkling
wine is quite difficult to pair with dessert. Sparkling wine can
be a wonderful selection throughout the meal, though.

are aromas of subtle brioche dough along with classic nutty and

long finish.

Blanc de Noirs literally means "white of blacks" and
is a sparkling wine made primarily from dark skinned grapes. The
bubbly derives a charming pink color because of this. The blend
of this sparkling wine is 85% pinot noir and a mere 15% chardonnay.

This wine demonstrates a new direction at Mumm Napa. The label
is a dramatic blue. They are downplaying the word "Cuvée"
(a french word for a blend).
There are aromas of tropical fruits like papaya and guava, as
well as more classic white fruit and yellow stone fruit. The sip
rewards with a resounding entrance of firm fruit and marmalade,
yeasty brioche and diverse complexities ranging from lemon peel
and pulpiness to exotic spice like ginger. The wonderful crispness
sustains this technically sweeter wine resulting in a perfect
reception or first course wine pairing.
