Great ideas from David Yon pictures, the Gold Book and a private consultation
with a wine cellar builder.

Extra insulation is required to prevent extreme temperature swing (-40°F to 95°F!!).
Wine cellar is located in the Laurentian region of Quebec, Canada.

Exterior insulation (4in of pink foam) of walls & ground, recovered with aluminium (ivory color) for zero-maintenance. Flower bed to prevent excessive heat from sun (wall facing South direction)
Top 36in of "exterior" wall is first covered with 4in of pink foam insulation (nailed & glued to concrete wall), then 6in of insulation batt encased in a 2 X 6 16" OC wall division
(no need to insulate bottom part).

Basement drain pipe is covered with 3 layers of  reflective "bubble-pack" sheet (Reflectix) and sealed tight (notice, at the top of the following picture, stud gaps are sprayed with yellow insulation foam to prevent exterior warm air to seap in)
Exterior wall are then covered with aluminum vapor barrier (sheets are stappled to the studs and are over-lapped by 6in; gap is taped with moisture-resistant sealing tape)
Ceiling : first, 10in of insulation batt between the studs (note : it is not compacted with the ceiling), then covered by 3 1in layers of  Thermax (foam + aluminum sheet).
Interior walls : 2 X 8 or 2 X 10 16'' OC (the one with the door) filled with fiberglass batt, then 2 1in layers of Thermax on both side. Vapor barrier on both sides of interior wall (I have an air conditioning unit). Bottom of the two interior walls (with concrete floor) are sealed with caulking on both side to prevent moisture « escape ».
Furring is screwed everywhere (ceiling with 6in long screw!), and 8 X 1in pine planks are nailed (inside of the door is fitted with white steel strips for the magnetic weather stripping)
Details of the 11in thick door (modified Gold suggestion with improved « sas » features!)
Simple wooden floor
Air conditionning unit (WhisperKool 6000)
