Kind of a wine "belch" ...
this is one of the last processes in making champagne. As the champagne
has developed in the bottle, sediment accumulates near the cork.
Well they simply put the neck of the bottle into an ice bath .. freeze
it ... pop the cork and BELCH .. out pops the frozen sediment. Now
they put the cork back in and wa-la .. clear champagne. |

This was Italy's attempt to develop
wine districts similar to the Appellations in France. While the term
does legally refer to a geographical area, it has none of the "backbone" of
rules the the French system does. Thus a DOC wine simple guarantees
that wine comes from a given geographic area. It really doesn't have
much to do with quality |

Because the DOC classification
really did little to address the quality of a wine, the DOCG was
enacted. With strict enforcement of laws on growing and methods of
wine production, yields, etc .... the DOCG now truly offers the consumer
a benchmark on quality that can be trusted. |

This appellation is found on the shores of the Danube
between Krems and Vienna. The world's oldest viticulture school is
found here in Klosterneuburg. There is a new generation of wine makers
setting high quality standards in Donauland with "Wagramer Selektion" on
the label. Frühroter Veltliner is a rare specialty of this appellation. |
