is one that definitely influences lots of white wine that we drink.
It takes place in the vats just after the alcoholic fermentation.
If wines are allowed to go fully through "malo" .. they
will have a definite buttery overtone ( this is the lactic acid )
and sometimes too much. |

Ok .. the wine producer's in the US wanted to
come up with wine similar in style to the famous wines for the Medoc
region in France ... so .. Wa La.. Meritage was born ! To try to
make the quality of the wine a focus, the name was actually trademarked
in the US and only wineries that join the association of Meritage
producers and legally use the name. The blending of varieties is
similar to Medoc in that Cabernet Sauvignon, Malbac, Merlot and Cabernet
Franc are used to blend the red Meritage. There is also a white version
that is a blend of Semillon, Sauvignon Blanc and Muscadelle. |

at the same location .. might not be a "chateau". This
would not be the case if the proprietor made the wine one place and
then sent the wine somewhere else to be bottled. |
