During fermentation ... the exposure of the
wine to oxygen can lead to a "browning" of the color of
white wines and a slight "off" taste. This is avoided somewhat
by the process of cold fermentation. However, cold fermentation can
lead to the "pinking" of the color of white wines where,
at the bottling stage, if the wines are exposed to oxygen they can
develop a pink cast to their color. Antioxidents are often used to
prevent these two issues |
