| racking |
the act of draining off clear wine from the
original barrel that it is fermented ( i.e. rack off the lees* ).
The wine is then left in the new barrels for several months and "racked" off
into another barrel. Some times, if the wine is to spend a long aging
period in a barrel it is "racked" for a third time. |
