Tacoronte Spanish Wine Region
Tafelwein German - Translates into "table wine" .. Made from normally ripe and slightly under ripe grapes. Primarily consumed in Germany, very little export to the US. The wines are chaptalized due to not enough natural sugar in the grapes when harvested to produce a sufficient level of alcohol in the finished wine. Can be dry, medium dry or sweeter style. This category is further divided into basic Tafelwein and Landwein*, the latter being a notch above the former.

tannin One of the major components of red wines .. this astringent stuff is found in the seeds, skins and stems of grapes. During the making of wine, the longer the wine stays in contact with these .. the more tannin there is. It helps to age red wine but like everything else, it must be in balance with the fruit. Many young reds suffer from being too tannic. Many times fining* is used to remove some of the tannins. The best way to describe how it effects your palate is to brew some VERY strong tea. That "mouth puckering" that you get along the sides of your mouth and tongue is caused by tannin.

tartaric acid hey .. have you ever popped a cork only to see what looks like little bits of clear glass attached to the bottom of it (don't worry, it's not always bad) well that's this stuff. In some white wines that have too much it will actually crystallize out on the cork. It is this acid that balances the sweetness of grapes. ( see - crystals also )

terroir ( le terrior ) While this literally translates into "soil" .. in wine terms it really means much more. Nowadays it is used to mean the entire environment that a grape is grown in. That's why, in places like Burgundy, the pinot noir grapes from a Grand Cru ( costing 100s of bucks ) can come from a vineyard that is less than 15 feet from another vineyard that is classified as Premier Cru (costing $30). Think of your garden .. there are places where your tomatoes grow great and yet perhaps only a few feet way there is a spot where they don't do as well. It is all due to the microclimate, soil makeup, angle to the sun, how much wind, how much rain ... and on and on .. that a given piece of vineyard receives.

Trocken means "dry" in German. These wines have the lowest residual sugar of all German wine
Trockenbeerenauslese (TBA) (TBA) (= Dry Berries Select Picking): The highest possible ripeness level in the QmP* category. To achieve the concentration of sugar and acidity for these wines, noble rot is usually necessary, which is a fungus, that perforated the skin of the grape and lets the water drip out causing the remains to concentrate. The by that way dried berries are picked out of the bunches and pressed separately resulting in an almost syrup like juice that has an enormous concentration of natural sugar and acidity. Harvest of individually selected berries which are overripe and dried up at the vine almost to raisins. Rich, sweet, luscious, honey-like wines. They represent the top of the German desert wines. They rival and can surpass many of the fine Sauternes from France. Made from grapes at the very end of their live on the vine and picked one by one. These wines can easily age for 20-50 years. Enjoying these wines borders on spiritual experiences.
