About twenty years ago, when I decided to make Israel my home-base, if someone had told me that I would one day be singing the praises of Israeli wines and cuisine, I would have probably chuckled politely. Today, on the other hand, I can easily recommend a handful of restaurants as "world-class", and dozens more, from those featuring bistro-style and modern French cuisine, to those specializing in the best of Moroccan, Italian, Spanish, Greek, Balkan and even TriBeCa style American restaurants, one can dine very well indeed in Israel. The same is true of wines, for a true wine revolution has now put Israel fairly and squarely on the wine map of the world. Tel Aviv cannot boast that it's restaurants rival the best of Paris or Lyon, and the region surrounding the Sea of Galilee is not producing wines to rival those of the great chateaux of Bordeaux. That is not the issue. What is important is that a group of highly talented chefs and winemakers are moving in all of the right directions and whether one lives in or pays a visit to Tel Aviv, Jerusalem, Haifa or any of the more provincial cities or towns of Israel no-one will suffer from a lack of excellent food and fine wine. As a professional restaurant and wine critic, one who gains enormous pleasure from dining out and sipping fine wines, I am personally thankful for this.
