To my sad experience, nearly every one of the exclusively vegetarian restaurants I have dined in within Israel has served food more appropriate for people recuperating in hospitals or being punished for unspeakable crimes in prisons than for those seeking a truly good meal. Happily, in many of the very best restaurants as well as in some of the simplest establishments, regardless of their specialty, excellent vegetarian dishes are offered and some chefs even go out of their way to please vegetarian diners. Each of the restaurants listed below offers enough genuinely vegetarian dishes to build a comfortable meal. Keep in mind that in ALL cases, even with the most "obviously" vegetarian dishes, it is wise to ask the waiter or the chef whether the dish or its sauce was based on chicken or beef stock.
