When Gertrude Stein claimed that the only "truly civilized beverage" was Champagne, she was exaggerating. As that marvelously idiosyncratic lady made clear in her essays and books and at meetings with her friends, coffee, tea, lemonade and other non-alcoholic beverages can be among the great pleasures of life. Personally, I know that without coffee my life would be greatly diminished; that a fine cup of tea can be a gift from the gods; and that there are moments when nothing in the world more rewarding than entering a Parisian cafe, there to take a place at a minuscule table and to pass a magnificent half-hour with an ice-cold citron presse. It is precisely to such pleasures that this section is devoted.
